?‍?‍?‍?小時候,我家的早餐多是潮州粥(糜),?家裡長備各種拌菜小碟,如鹹花生、鹹菜粒、醃蜆、菜脯、麻葉、靑橄欖和欖菜......等等,?簡單的拌菜就已經好好配粥跟飯了。

?「欖菜」用途十分之多元化,除了廣為人知的欖菜肉碎四季豆外,更可以用來蒸?豬肉、?蒸魚、炒米粉...等等。

這次給大家介紹這一道「潮州欖菜蝦球」,烏黑亮澤的欖菜滲入海蝦之中?,鹹鮮帶橄欖油香,讓這道菜更好下飯。??(食譜如下,謝謝??)


「潮州欖菜蝦球」

材料:-
大蝦...............8隻
蒜瓣...............3瓣
潮州欖菜........1.5湯匙
蔥段...............1棵
米洒...............1茶匙
魚露...............1/2湯匙
糖...................1/2湯匙
鹽...................1/4茶匙

做法:-
1. 將大蝦去腸去殼留尾,?花。下鹽作低味。
2. 熱油鍋內下蒜瓣和蔥爆香,然後加入大蝦炒香,從鍋邊灒下米酒。
3. 把糖、魚露、潮州欖菜加入鍋內炒均勻即成。
